Provinces
About This Spot
Nestled just inside the Hilton on South Lindbergh Boulevard, Provinces offers more than just a convenient stop for travelers—it reveals itself as a quietly refined bistro where local charm pierces through the typical hotel restaurant experience. Upon entering, there’s an inviting warmth that wraps around you, a gentle hum of friendly conversation and attentive service that makes the atmosphere feel both polished and approachable. The pace here strikes a comfortable balance—relaxed enough to savor a leisurely meal but lively enough to keep a pleasant buzz in the air.
The setting feels like a welcoming neighborhood spot, where chefs pay attention to the details that matter: the right seasoning balanced against thoughtful presentation, and ingredients sourced to create an evolving menu that resonates with both classic American comfort and subtle international influences. Whether it’s a lazy weekend breakfast or a quiet weeknight dinner, the experience leans into familiar textures and flavors shaped by small culinary surprises—a hint of truffle in a creamy ravioli, the fresh brightness of herbs atop a shrimp dish, or the warmth of a richly spiced roasted chicken.
There’s a true honesty in the food here that mirrors the unpretentious but quality-driven service, where servers seem genuinely interested in making your visit feel like more than just a meal. Some guests find themselves lingering over buttery coffee and a perfectly crafted eggs Benedict, while others are drawn to the slow savoring of a perfectly cooked steak or the satisfying crunch of homemade chips topped with smoky cheese and bacon. Even the late-afternoon or evening visits have a subtle intimacy to them, reminding you that a hotel restaurant can indeed hold the soul of a local spot.
Provinces feels like a place for moments—whether it's a quiet corner table catching up with someone special, a solo pause with a good book and a glass of wine, or a simple family meal where everyone finds something that feels just right. It manages to balance comfort with an eye for refinement, welcoming all who pass through its doors with a sense of belonging rather than haste.

My wife and I had to run errands and stumbled upon this restaurant. Yes, it is tucked inside the Hilton. We were pleasantly surprised with the food, and the service provided by Lorna. She was fantastic! We ordered a pizza, a cheeseburger with fries, and a chicken sandwich with fries. The iced tea was fresh. We even ordered a pizza to go for our son. Overall we had a great experience, could it be updated, sure. The floor did need to be cleaned a little better. But as far as the food goes, I highly recommend! MVP

Really excellent place for lunch or dinner, not your usual hotel restaurant. Much like a local bistro, with a tasty menu that goes from toasted ravioli to salads to pasta and steaks. Great Mediterranean salad, shrimp scampi was perfect with plump tender shrimp and al dente pasta. Filet steak was done perfectly. Desserts are from local places lik MacArthur's and Hank's Cheesecakes. Hidden gem, with very reasonable prices.

Visited St. Louis and stayed at the Hilton. We had breakfast at The Provinces restaurant and breakfast was delicious ordered the create your own omelette mushroom, green onion and Swiss $15 -- very good. Derek was our server and he was excellent. Ambience was nice and welcoming.

My first night eating here I ordered the Amish chicken. It was delicious and came with garlic mashed potatoes, baby carrots, and asparagus. My second night I ordered the chicken pacatto. It was also tasty. For dessert I had hot apple pie with vanilla ice cream...yum yum yum! I had to order it again on my 2nd night. The staff was welcoming and attentive!

Everything was wonderful. We dined for lunch on a Sunday afternoon. It was quiet and classy. The Ribeye was a nice size and delicious. The Sweet Potato Has I could eat all day. The salmon was a little bland for me but still good. The atmosphere and service were a delight.

Had a sort of layover here between medical appointments. First was breakfast (photo is The Broadway -- and its hefty portion of lox;) then a respit at the grill with a delightful Dalwhinnie 15-yr.
